THE WINE CELLAR

We told you some details about our way of working in the vineyards which follows the rules of the biodynamic agriculture. In the wine cellar we continue the hard work we did outside along the vine rows, still following the philosophy of purity in wine.

HOW DO WE WORK IN THE WINE CELLAR?

In the wine making we focus on two purposes. First, we want be sure that the work we did in the vineyard is fully respected in the wine making. Second, our wines should be pure and elegant. That means:

  • Pressing grapes by feet or using an old winepress

  • Exclusive use in the fermentation of native yeasts present on the peels

  • Fermentation in concrete tanks

  • Ageing some of wines in old french barriques

  • No temperature control

  • No filtrations (we thank the gravity)

  • No sulphites or very low added sulphites (max 25mg/l in red wines, no sulphites in white wine)
